The Origin: A Closer Look at Goro Bedesa
Goro Bedesa is located in the Hambela Woreda of the Guji Zone, an area celebrated for producing some of the finest coffees in Ethiopia. This particular washing station, in operation for the past five years, is dedicated to sourcing the highest quality red cherries from local smallholder farmers. These farmers meticulously handpick the cherries from sunrise to sunset, ensuring only the ripest and most flavorful are delivered to the washing station for processing.
The Art of Processing: Natural Anaerobic Fermentation
The journey of Goro Bedesa coffee begins with careful cherry flotation, a process that separates the finest red cherries from any unwanted materials. Only the best cherries are selected for this anaerobic lot, ensuring a higher quality and more desirable flavor profile.
Once selected, the cherries are placed in specialized barrels to create an oxygen-free environment. This anaerobic fermentation process allows unique and desirable flavors to develop. To ensure consistency, the cherries are rotated every four hours within GrainPro bags, resulting in a uniform and exquisite taste in every cup.
Drying to Perfection: The Final Touch
After fermentation, the coffee cherries are carefully laid out in the sun for 10 to 21 days. This natural drying process is crucial in achieving the optimal moisture content, which helps stabilize the coffee before it undergoes further processing. The result is a coffee that is rich, flavorful, and full of the nuanced characteristics that Guji coffees are known for.
